Born out of a partnership between Ginto Hotels and the creative trio behind The Small Group (La Mercerie, Livingston, Chardon, Pétrin Couchette), Louison is rooted in the heart of Cours Saint-Louis, which has always connected eras as much as people. Named in honor of Louis d'Anjou, this street was once bustling with markets and flower shops in cast-iron pavilions (including the famous La Quique, which still exists today). Louison boldly and modernly carries on this spirit by breaking with the conventions of traditional hotel restaurants and offering generous, contemporary cuisine that is open to the city.

In a setting designed by Dorothée Delaye and inspired by old apothecary counters, with sunny tones and a confident bistro spirit, the Amista hotel's restaurant is welcoming at all hours, from morning to night, every day of the week! American-style breakfasts, smart and comforting lunches, generous weekend brunches, aperitifs that linger on the terrace, homemade snacks, or an impromptu iced coffee... Louison is a Marseille bistro just like we dreamed it would be: simple, bright, and generous.

From early morning, the room fills with the aroma of freshly ground coffee from La Tisserie, a roaster located on Rue d'Endoume. They serve a proper breakfast: eggs cooked to order, homemade brioche, granola, crispy bacon, or the famous breakfast bun with Comté cheese and chives, all prepared with southern care and cheer. 

At lunchtime, the kitchen comes alive with fresh, local produce: Provençal stew, beef cheek shepherd's pie, fish of the day depending on the catch, bistro-inspired meat dishes, or a seasonal vegetarian plate. Comforting, homemade cuisine that is unpretentious but full of flavor. 

In the afternoon, settle in on the terrace or inside for a coffee, dessert, or some crispy panisses to dip in aioli, a generous slice of homemade terrine with pickles, or a piece of tomme cheese with flowers from L'Art de la Fromagerie.

And when the light fades, aperitif time stretches out: a chilled Pastagnol (gin, Ricard, lime, peppermint) or a glass of Pomponnette from Domaine de Sulauze, a typical Provençal rosé. We nibble on Maussane olives, Allauch crisps, or a plate of Serrano ham and a selection of cheeses to share.

Louison's suppliers are chosen for their proximity and commitment: local artisans from Marseille who share our taste for authenticity. The wines and drinks on the menu also tell a story, that of the personalities behind the bottles, passionate winemakers and producers whose expertise we admire.

At Louison, everything is designed to be delicious, simple, and full of sunshine; a lively place where you can come from morning to night to eat well, drink well, and enjoy the light of Marseille.

Louison is the latest creation from The Small Group, the French gastronomic collective founded by Laura Vidal, Harry Cummins, and Julia Mitton, known for La Mercerie in Marseille and other popular restaurants in southern France.

In collaboration with Ginto Hotels, they bring a modern, authentic, and local approach to hotel dining, combining Mediterranean inspiration, Provençal roots, and culinary creativity to redefine the contemporary restaurant experience in Marseille.
